Congratulations to Thomas Williams (Tom) of The George in Christchurch who was awarded the NZ-UK Link Cookery Apprentice of the Year in the National Hospitality Standards Institute (HSI) Modern Apprentice of the Year competition. Up against competitors from all over New Zealand, Tom, an apprentice chef in The George’s signature restaurant Pescatore created a winning menu from a surprise box of ingredients.
The competition is one of the HSI Annual Excellence in Training Awards that are part of the 7th Annual HSI Hospitality Training Conference 2009. The awards were presented at the conference’s gala dinner on 6 July 2009. As the awards are training focused, part of Tom’s prize will be to travel to London to work with some of London’s top kitchen brigades in a variety of restaurants. Peter Gordon, of The Providores Restaurant in London, will co-ordinate the placements to ensure Tom’s experience is maximised.
While Tom will be missed in the kitchen at The George during his sojourn, we are thrilled that he has the opportunity to work in some of the worlds most revered restaurants and excited to see and taste what he has learned from this wonderful culinary experience upon his return.
