Prickly Maraschino Sour
Our Cocktail of the Month for May is the vibrant and beautifully balanced Prickly Maraschino Sour, a modern twist on a classic sour that captures the essence of early autumn in every sip.
Crafted with vodka, maraschino liqueur, prickly pear syrup, fresh lemon juice, and aquafaba, this cocktail delivers a layered and refreshing experience. The palate opens with a bright citrus tang from lemon, followed by the soft, delicate sweetness of prickly pear, lifted further by the rich cherry-almond notes of maraschino liqueur.
The addition of aquafaba creates a smooth, silky foam that gives the drink a velvety texture and elegant finish, enhancing both mouthfeel and presentation. Well-balanced between tart and sweet, this is a cocktail that is as visually striking as it is refined and refreshing.

Helpful, friendly staff, and once we settled into our room, we were offered a complimentary juice, softdrink, or barista coffee via room service. Location is fantastic as the park and walk to botanical gardens was easily accessible. Free parking is also a bonus for us as we paid up to $40 at other city hotels. The best aspect of our stay was the staff – all seem happy and obviously enjoy working at The George.
